Trooper York Eggplant caponata recieipe

Take three large eggplants. Cut off the end with the stalk, and using a potato peeler, peel long strips of the skin off of the eggplant. Leave some strips on so it looks like a beach umbrella. You know what I mean.

Then dice the eggplant in square pieces about two inches a piece.

Put some olive oil and diced garlic in a pan and after it is heated add the eggplant.

Fry the eggplant until it becomes somewhat mushy. Not too mushy now.

Take either your own sauce or get a few cans of whole tomato and put it in the food processor and pulse it a few times. Don't smush it into puree, be sure to have a bunch of healthy chunks.

Add some red wine vinegar, about a quarter of a cup to the eggplant. Let it bubble a little and then add the tomato. You can also use apple cider vinegar if you want to go crazy.

Stir as it cooks. Add some salt and pepper. Cook for about six minutes. Take it off the stove and let it cool.

Add a jar of green olives with pimentos, halved of course.

Chill.

Then serve.

Trooper, I will save this recipe, but I wish I'd had it three weeks ago when my garden yielded a lovely eggplant crop.

By the way, the wienie dog is fine, despite having his throat sliced up by a big, aggressive dog. Sliced weiner was almost on the menu!

I'm off to watch the Saints trounce Tampa Bay. One of my favorite local bloggers posted his yearly season prediction today (he calls it 8-8 for the Saints, since we still have NO defense). Here's a choice bit for you; wonder who he's talking about?

"There's also a rumor that there's a new tight end on the roster but nobody has seem him this pre-season. There has been some talk about a tattooed douchebag with frosted blond hair hogging all the time on the sideline exercise bike but I expect he'll just go away once the Daiquiri shops in St. Bernard Parish return to pre-Gustav operating hours."

Great that you are ok kid, but who could resist taking a bite out of a wiener dog? Aren't they kind of aggresive too? I am glad that he is recovering and that you and yours are doing great.

Hey you will be waiting a long time for Shockey to do something good for your team. He is totally overrated and will be cut by the end of the season, just wait and see.
