Hey meat loaf is kicking ass!

2 teaspoons vegetable oil

1 medium onion, chopped

2 garlic cloves minced

2 large eggs

1/2 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon ground black pepper

2 teaspoons Dijon mustard

2 teaspoons Worcestershire sauce

1/4 teaspoon hot sauce

1/2 cup milk1 lb ground chuck

1/2 lb ground pork

1/2 lb ground veal

2/3 cup crushed saltine crackers, about 16

1/3 cup minced parsley

For the glaze, mix all ingredients in small pan, set aside. For the meatloaf, heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; saute until softened, about 5 minutes. Set aside to cool. Mix eggs with salt, pepper, thyme, mustard, Worcestershire sauce, and milk. Add to meat in large bowl along with crackers, parsley and cooked onion and garlic. Mix with fork until evenly blended and mixture doesn't stick to the bowl. If it sticks add milk. With wet hands, pat mixture into 9x5-inch loaf shape. Place in foil lined baking pan for easy clean up. Brush with half the glaze. Bake until crisp, about 1 hour. Cool at least 20 minutes and serve with the remaining glaze.

This is a meatloaf recipe I actually made. I did substitute homemade bread crumbs from half a loaf of Italian bread for the crackers. And of course I put bacon on top of it. But it was still damn good.

Meatloaf is out in front on our little poll but not everyone has been heard from. I guess people are much more emotional about their cake.

This meat loaf will slam those arteries closed in the blink of an eye. But at least you'd have the bliss of tasting it before you expire.

@Jaed:

Finally made strawberry shortcake today according to Trooper's recipe and your suggestions: excellent

"I guess people are more emotional about their cake."

Ahem. LOL.

Oh, chickenlittle! YUM!

Back to your regularly scheduled meat loaf...

chickenlittle: wait till you have peach shortcake! Or raspberry. A world of shortcakes awaits you as soon as summer fruit gets here.

Trooper, where's the glaze? I see no glaze ingredients...

@jaed: Can't wait. The berries and fruits just keep getting better and better over the next couple months.

I voted for the meatloaf, but really the recipe should include grated carrots. And yes, I also voted for the carrot cake.

It's probably kicking ass because of the extreme oversight that was leaving shepherd's pie off the list.

Sheesh.

You know you are right. I did not list the glaze. It includes fresh tomatoes sauce, and other ingredients that I will post later.

You know I am a dope. I thought I could only have four choices on these polls but I figured out how to add more. I was going to add chicken soup and tuna casserole but I must admit I never thought to add shepards pie. Just goes to show you we all have very specific ideas as to what is our comfort food.
