Darcy: Here's the Recipe for the Bodacious Cheese-Ball:
2 8-ounce packages of Philadelphia Cream Cheese 1 small can crushed pineapple [I drain it slightly] [5 ounce size?--it's small] 1 cup chpped pecans [reserve .5 cup for the outside of the balls] 1.5-2 cups of green pepper or red pepper [for Christmas, use one medium-large of each color] 2 Tablespoons of fresh onion, chopped finely 1 tsp Lowry's Seasoned salt
Soften cheese. In LARGE bowl, add pineapple, mostly drained, half the nuts, coarsely chopped peppers, onions and salt. Mix well, but you will have to get in there with your hands to mold into one large or two small balls. Place on serving platter and coat with remaining nuts. Cover and refrigerate. It is best to chill overnight.
Serve on buttery crackers [Ritz, TownHouse or Clubs].
