We are going lite at dinner lately!




In the summer you have to cut down because you don't want to eat the heavy hearty stews and pastas that you do when it is freezing outside.

So we went with an all appetizer menu.

For the main course Lisa had the spinach salad with the strawberries and figs. I had the prosciutto and melon with the mozzarella.

Light and tasty for a quiet Wednesday night.

Light is good for dinner. Breakfast like a king, lunch like a lord, dinner like a pauper.

Both dishes look very tasty. We often just eat something very light instead of a full dinner on hot days.

We have a great selection of local olives. Garlic stuffed, kalamata, anchovy stuffed, blue cheese, romano and parmesan, plus your regular black olives. I love a plate with several types of olives, some good dry salami or prosciutto, cheeses, crackers, fruit (apricots are really good right now) and a glass of wine. Perfect.

I am a big believer in using anchovies whenever possible.

Whenever we are going south on I5 we stop at the Olive Pit and buy a new supply. They have a nice tasting bar so you can sample all of the different types before you buy. You can also sample the various olive oils.

Evi, A simple pasta. Two cans of anchovies simmered in olive oil, hot pepper seeds, and garlic. Add a pound of cooked linguine and eat the whole fucking thing! A little fresh basil if you want some color.

Except for the steak, I rarely read recipes of good ol' fashioned American favorites. Like bacon.

I tried Meade's water recipe yesterday and was a bit disappointed. While the texture and flavor is juicier, the end stage after the water is boiled away is just as messy and splatters. I burned myself and my daughter who was standing next to me.

I'm going back to my old ways--on a skillet, on the Weber gas grill outside.

The tomatoes are fruiting (still green) and I think I'll get several nice big eggplant fruits.

Cool. Nothing is more satisfying than making some dishes with fresh veggies from your own garden.

You live in a gardening paradise for temperature and ability. Still jealous }-D

Well, maybe not NOTHING is more satisfying. Some afternoon sex or a really great nap. Maybe both. First the sex....>THEN the nap.

But....good food pretty much ranks up there for satisfaction. That and a nice drink or three.

lately my wife and I have been having a couple of meals per week of this sort.

We are doing this The Fast Diet program and on the "fasting" days you get only 500 calories, so a salad with some kind of grilled meat or seafood is the go-to for those days.

The main aim of this regime is not weight loss but better cholesterol, blood sugar and so forth. Of course we welcomed the slight weight loss that has come about but the main thing I like is being able to eat whatever I want for the other 5 days of the week.
