This weekend is last licks....for the plate that is.



This weekend is our last indulgence until we get serious and rededicate ourselves to our health. We have to lose more pounds and go back to that strict diet and lose back the pounds that we put on over a self-indulgent summer. We had a granddaughter for a couple of weeks and entertained our production manager last week so we ended eating out a bunch. Not good for the diet and not good for the weight situation.

We ate very well but healthy for most of the weekend but it is good to be home where I am in control of what we eat and I can make tasty meals without much salt.

I have to admit that I brought all the bad stuff to the weekend. The franks. The sausage. The bracoli. The Italian bread. The cheese cake.

But hey it is last licks.

So...Trooper.

Try this recipe for a treat that I bet you can justify.

Use the low fat ricotta and if you must...half and half instead of cream. Expect it to weep thoug. Come on. It really isn't that much cream. I use splenda because we are trying to cut down on sugar and carbs. (hubby is diabetic) If you don't want pineapple, because it does have some sugar in and of itself, then some other fresh fruit. Or no fruit and cinnamon sprinkled on top.

A small indulgence once in a while keeps us on the straight and narrow path we have to walk.

Sausage and peppers in tomato sauce with those big slices of onion is my favorite!

We cooked up the sausage and the bracoli and some filet mignon tips in a fresh tomato and basil sauce that we served over rigatoni. With garlic bread made on the bbq to dip with.

It was our last indulgence for the summer. Now we are back to our simple fare that is basically vegetarian with very little sugar or starch.
