My dad used to cut up bacon, fry it up and then saute zucchini and yellow squash in some of the grease. Then he'd add canned tomatoes and simmer for a bit. It was thick like a stew and bacon and tomato flavor with the veggies tasted so good.
I make it often and I like to add fresh green beans.
The zucchini in this pic made me so hungry that I'm eating my lunch early.

I have been shreading summer zuchini on the madoline and sautéing it with stuff (tomatoes, shallots, garlic, fish, etc.). It is excellent.
Evi, Sounds superb. I do the zucchini w/ toamtoes, leeks and peas as a side dish w/ rice and fish or chicken.
Trooper, Panko are great, something I discovered ~6 or 7 years ago. Those Japs are good for something.
